Smoked Sausage & Mushroom Breakfast Skillet

INGREDIENTS
  • 8 large eggs
  • ¼ cup heavy whipping cream
  • 1 cup shredded cheddar cheese
  • 2 teaspoon of your Favorite Unkie's Seasoning (or more to taste)
  • 12 ounces smoked sausage sliced (I use Hillshire Farms)
  • 1 cup diced white mushrooms
  • ¼ cup sliced green onions, plus extra for garnish if desired.

INSTRUCTIONS

  1. Preheat the oven to 400F.
  2. In medium bowl, whisk together the eggs and cream, then stir in the cheese, seasoning and set aside.
  3. Take a 12-inch cast-iron skillet and add the sausage and vegetables. Then pour egg mixture evenly over sausage and vegetables.
  4. Bake for 25 minutes or until the eggs are set.
  5. Run a knife around the edge of skillet before slicing. Garnish with more of your favorite Unkie's Seasoning and green onions, if desired.
