INGREDIENTS
- 8 large eggs
- ¼ cup heavy whipping cream
- 1 cup shredded cheddar cheese
- 2 teaspoon of your Favorite Unkie's Seasoning (or more to taste)
- 12 ounces smoked sausage sliced (I use Hillshire Farms)
- 1 cup diced white mushrooms
- ¼ cup sliced green onions, plus extra for garnish if desired.
INSTRUCTIONS
- Preheat the oven to 400F.
- In medium bowl, whisk together the eggs and cream, then stir in the cheese, seasoning and set aside.
- Take a 12-inch cast-iron skillet and add the sausage and vegetables. Then pour egg mixture evenly over sausage and vegetables.
- Bake for 25 minutes or until the eggs are set.
- Run a knife around the edge of skillet before slicing. Garnish with more of your favorite Unkie's Seasoning and green onions, if desired.
