Prep & Cook Times

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes
  • Serving Size: Serves 6

Ingredients

  • 6 hard-boiled eggs, peeled
  • 3 tbsp mayonnaise
  • 3 tsp diced chives
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • A dash of hot sauce
  • 3 slices cooked bacon, crumbled
  • Pickled onions (optional)
  • Jalapeños (Cowboy Candy style, optional)
  • Unkie’s Seasoning (to taste)

Instructions

  1. Smoke the Eggs
    • Using a Smoking Tube: Fill the tube with pellets, tap lightly to settle, and ignite with a torch until the flame holds. Let it burn for 5 minutes, then blow out the flame. Place peeled eggs on a fire-safe rack or tray and let them smoke for 30 minutes.
    • Using a Smoker: Preheat the smoker to 180°F. If available, use the "Super Smoke" feature for extra flavor. Place eggs directly on the grill grate and smoke for 30 minutes.
  2. Prepare the Filling
    • Cool the smoked eggs and slice them lengthwise. Scoop out the yolks into a gallon-sized zip-top bag.
    • Add mayonnaise, chives, Dijon mustard, apple cider vinegar, and hot sauce to the bag. Seal and knead the bag until the mixture is smooth.
  3. Assemble the Deviled Eggs
    • Snip a small corner off the zip-top bag and pipe the yolk mixture into the egg whites.
    • Top each egg with crispy bacon bits and optional garnishes like pickled onions or jalapeños.
    • Finish with a generous sprinkle of Unkie’s Seasoning for bold flavor.

Cooking Tips & Notes

  • Extra Smoky Flavor: Extend smoking time by 10 minutes for a deeper, richer smokiness.
  • Smooth Filling: For an ultra-creamy yolk mixture, use a hand mixer instead of kneading the bag.
  • Creative Toppings: Try smoked paprika, crispy fried onions, or a sprig of microgreens for a gourmet presentation.

Equipment Needed

  • Smoker or smoking tube
  • Large zip-top bag
  • Sharp knife
  • Spoon or piping bag for assembly

Storage and Reheating Instructions

  • Storage: Store leftover deviled eggs in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Not recommended; these are best served cold or at room temperature.
