Ingredients

  • 4 uncooked bratwursts

  • 1 teaspoon brown sugar, firmly packed
  • 1/4 cup bread and butter pickles, roughly chopped
  • 1 teaspoon thyme leaves, chopped
  • Salt and pepper, to taste

Instructions

Make the Onion Relish

  1. Heat olive oil in a large deep skillet over medium-high heat.
  2. Add the sliced onions and sauté, stirring frequently, until very soft (about 8-10 minutes).
  3. Pour in the beer and add the brown sugar. Cook over medium-high heat, stirring occasionally, until the liquid evaporates and the onions caramelize (about 10 minutes).
  4. Stir in crumbled bacon, chopped pickles, and thyme. Season with salt and pepper to taste.
  5. Set aside. This relish can be made ahead and stored in the refrigerator.

Grill the Bratwurst

  1. Preheat your grill to medium-high heat (around 375-400°F).
  2. Place the bratwursts directly over the heat and grill, turning occasionally, for 5-7 minutes or until evenly browned and the internal temperature reaches 160°F.
