Ingredients
8 ounces angel hair or spaghetti
4 cups baby spinach
1½ cups cherry tomatoes, halved
3 teaspoons olive oil, divided
½ cup onion, finely chopped
1½ pounds medium shrimp, peeled and deveined
3 garlic cloves, minced
1 teaspoon crushed red pepper flakes (optional, for extra heat)
½ cup dry white wine
¼ cup reduced-sodium chicken broth
¼ teaspoon salt

3 tablespoons fresh parsley, chopped
2 tablespoons butter
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain and return the pasta to the pot.
Add the baby spinach, cherry tomatoes, and 2 teaspoons of olive oil to the hot pasta. Toss gently, cover, and let the residual heat wilt the spinach while you prepare the shrimp. - Heat the remaining teaspoon of olive oil in a large skillet over medium-high heat.
Add the chopped onion and cook for about 1 minute until slightly softened.
Stir in the shrimp, garlic, and crushed red pepper flakes. Cook for about 2 minutes, stirring frequently. - Pour in the white wine and chicken broth. Season with the salt and black pepper, then cook for another 2–3 minutes, or until the shrimp are pink and fully cooked.
Remove the skillet from the heat and stir in the butter and fresh parsley until the butter has melted. - Add the shrimp mixture to the pasta and toss everything together until well combined.
