Firehouse Breakfast Casserole

This is the breakfast that clears the bay in seconds. Loaded with sausage, ham, peppers, and a blanket of melted cheese, this Firehouse Breakfast Casserole is built to feed a crew and keep everyone full through the morning run. It is hearty, simple, and perfect for meal prep or a weekend family breakfast.

Ingredients

1 lb breakfast sausage
8 oz diced ham
1 (30 oz) bag frozen shredded hash browns
12 large eggs
2 cups shredded cheddar cheese
1 cup shredded pepper jack cheese
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 medium onion, diced
1 bell pepper, diced
2 jalapeños, diced
Optional: a shake of your favorite Unkie’s Seasoning blend

Instructions

1.      Preheat and crisp the base - Preheat oven to 375°F. Grease a 9x13 baking dish and spread hash browns evenly across the bottom. Bake 15–20 minutes until lightly golden.

2.      Cook the meat - Brown sausage in a skillet over medium heat until fully cooked. Drain excess grease and set aside.

3.      Sauté the vegetables - In the same skillet, cook onion, bell pepper, and jalapeños until softened, about 3–5 minutes.

4.      Build the casserole - Layer sausage, ham, and sautéed vegetables over the baked hash browns.

5.      Add the eggs - Whisk eggs, milk, salt, and pepper in a large bowl. Pour evenly over the casserole.

6.      Top with cheese - Sprinkle cheddar and pepper jack evenly across the top.

7.      Bake - Bake uncovered at 375°F for 45–50 minutes, until the center is set.

8.      Rest and serve - Let rest 5 minutes before slicing. Serve hot.
