  • Total Time: 45 minutes
  • Serving Size: Serves 4-6

Ingredients

  • 1 loaf crusty French bread
  • 2 tablespoons butter
  • ½ cup green onions, chopped (plus extra for garnish)
  • ½ cup celery, finely diced
  • 2 cloves garlic, minced
  • 1½ pounds medium-sized shrimp, uncooked, peeled, and deveined
  • 1 tablespoon Unkie's Coastal Cajun Seasoning
  • Juice from half a lemon
  • 1 cup mayonnaise
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Slice the loaf of French bread in half lengthwise. Use your fingers to remove a small amount of the bread from the inside to create a hollow space for the filling.
  3. In a large skillet, melt the butter over medium heat. Add the green onions and celery, cooking for about 2 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Add the shrimp to the skillet and cook until they turn pink. Sprinkle in Unkie's Coastal Cajun Seasoning and stir to combine. Squeeze lemon juice over the shrimp and toss to coat.
  5. Remove the skillet from heat and let the mixture cool slightly. Transfer the shrimp mixture to a large bowl and stir in the mayonnaise and shredded cheddar cheese.
  6. Spoon the shrimp mixture onto the hollowed-out halves of the French bread.
  7. Place the filled bread on a sheet pan and bake for 18-30 minutes, or until the top is golden brown and bubbly.
  8. Garnish with additional green onions. Slice into portions and serve warm.
