Ingredients:
- 2 tbsp Unkie’s Coastal Cajun
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 small yellow onion, chopped
- 1 medium red bell pepper, rinsed, seeded, and chopped
- 1 lb baby red potatoes, cubed
- 1 lb baby yellow potatoes, cubed
- 3 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- ¼ cup all-purpose flour
- 4 cups chicken stock
- Salt & cracked black pepper to taste
- ¾ cup heavy cream
- 3 cups frozen corn
- ¼ cup sliced green onions, plus more for garnish
Instructions:
- In a small bowl, toss the shrimp with half of the Coastal Cajun seasoning. Set aside.
- Heat olive oil in a Dutch oven or large stockpot over medium-high heat. Add onion and bell pepper, cooking for 2-3 minutes until softened. Stir in the potatoes, remaining seasoning, and garlic. Cook for another 2-3 minutes, stirring constantly.
- Melt butter in the pot. Once melted, add flour and stir continuously for 2 minutes to cook out the raw flour taste.
- Gradually add chicken stock while stirring constantly. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes, stirring occasionally, until potatoes are tender.
- Stir in the frozen corn and shrimp. Simmer for 5-7 minutes until shrimp are pink and opaque.
- Stir in heavy cream, adjust seasoning with salt and pepper, and let simmer for 3-5 minutes until thickened.
