Cajun Shrimp Biscuits

Ingredients

  • 1 lb shrimp, peeled, deveined
  • 2 tablespoons Unkie’s Coastal Cajun Seasoning, divided
  • 1 cup grated cheese (cheddar, pepper jack, or your choice)
  • 4 tablespoons unsalted butter, melted
  • 1 can (16 oz) big butter biscuits
  • ¼ cup all-purpose flour, for dusting
  • 1 tablespoon duck fat or cooking spray, for greasing

Instructions

Step 1: Season & Cook the Shrimp

  1. In a bowl, toss the shrimp with 1 tablespoon of Unkie’s Coastal Cajun seasoning.
  2. Heat a skillet over low heat and sauté the shrimp for 3-4 minutes per side until cooked through. Remove from heat and let cool for 10 minutes.

Step 2: Prepare the Biscuit Dough

  1. Lightly dust a work surface with flour and roll out each biscuit dough into a thin, even layer using a rolling pin.

Step 3: Assemble the Biscuits

  1. Place 3-4 shrimp and a generous sprinkle of grated cheese in the center of each flattened biscuit.
  2. Fold the biscuit dough over the filling and seal the edges tightly to enclose.

Step 4: Bake the Biscuits

  1. Lightly grease a baking sheet with duck fat or cooking spray and arrange the biscuits on it.
  2. Bake in a preheated oven at 350°F for 11-15 minutes until golden brown.

Step 5: Make Cajun Butter & Brush the Biscuits

  1. While the biscuits bake, melt the butter in the microwave and mix in the remaining 1 tablespoon of Unkie’s Coastal Cajun seasoning.
  2. At 11 minutes, remove the biscuits from the oven and brush them generously with the Cajun butter mixture.
  3. Return to the oven and bake until the tops are beautifully golden brown.

Step 6: Final Touch & Serve

  1. Once out of the oven, give the biscuits another light butter glaze for extra flavor.
  2. Serve warm and enjoy!
